How are skins of fruits removed by food industry for making juices or selling products?

It is by big machines that peel off them, or chemical, ...
Look for instance a kiwi, might be very hard to remove the skin, mango are also quite complex to prepare ...

Batch steam peeling is also called “flash steam peeling”. The raw materials such as roots and tubers are exposed to high pressure steam, 1500-2000 kPa in a rotating pressure vessel.

I wonder if it is very healthy. Molecules can be changed.

I too want as few added chemicals added to my food as possible, but get your
facts right, 'cancer' is a disease and 'caustic' is a chemical property.
I guess you wanted to say that caustics cause cancer, but in that case you
still cite not enough sources to make a credible argument.

Eh? So you don't ever eat steamed food? Or even cooked food?
