Besides GNOME Shell, what GUI elements and improvements will be added in?

As far as I know, an updated help browser (I think it is going to be quite awesome) New configuration storage and semantic search framework. Gobject, which is awesome. Gnome 3 seems pretty promising so far.

But is not the same, you can use GTK3 alone, as nothing to do with gnome.

Yes because it's a crossplatform toolkit. Well, the same people work on GTK as GNOME and it's developed by GNOME devs, unlike Qt, which is a separate companies' work.
