I can successfully boot 10.04 if I hold the shift key during boot and select 2.6.31-22 generic, but if I do nothing (or select any 2.6.32-25 variant - generic or recovery) I am greeted by a black screen.

What are the differences between the two that may account for this behavior?

There is a long list of bug fixes, and, as your case suggests, some regressions, between the two kernel versions. You could try troubleshooting the black screen by removing the 'quiet splash' options from the boot line. You can edit the bootlines temporarily in the grub menu by pressing 'e', or permanently, by editing /etc/default/grub.
