Pegasus Mail (pmail.com) lets me set my outbox to be processed at intervals - in effect, giving me 10 minutes after pressing 'send' to change my mind.
Thunderbird gives me 'ctrl-enter' - to queue up mail until I choose to 'send' - again, letting me change my mind.
Evolution... appears to do neither, unless I choose to 'work offline'. Are either the Pegasus or Thunderbird approaches available?
TIA
