I have some programs installed, and I want the ones I use the most to be at my desktop.
Is it possible to change the icon that represents the shortcut to my application?

Yes you can. If there is no icons in your applications launcher that you can simply right-click and 'Add this launcher to the Desktop', then :

1. right-click your desktop
2. choose 'Create Launcher'
3. fill the information as needed (example in screen shot)
4. click on the icon (top-left, as shown on the screen shot) and select any available icon you want from there. You might also want to download an icon from the web specifically for your apps.
