Hi,
I don't have a favorite game but I can list off some games I like to play (in random order). Note that these games can be found in Ubuntu Software Center and Synaptic Package Manager too.

Xmoto http://xmoto.tuxfamily.org/
Neverball and Neverputt http://neverball.org/
PokerTH http://www.pokerth.net/
Sdl-ball http://sdl-ball.sourceforge.net/

First Person Shooters:
OpenArena http://www.openarena.ws/
Alien Arena http://icculus.org/alienarena/rpa/
Nexuiz http://alientrap.org/nexuiz/
Sauerbraten http://sauerbraten.org/

Lot's of good games in the Software Centre. It can be hard to recommend games as it all comes down to personal preference. http://ubuntugamer.com/ is launching soon. That's from the folks behind http://omgubuntu.co.uk/ - hopefully that proves a useful resource.

I enjoy the basics, but love gbrainy, kreversi, open-yahtzee, etc.
