Simple question.

After creating bootable usb drive, can I still copy files (folders) onto the drive, or will they interfere with boot process.

Would like to copy document, video and music folders onto usb drive

Yes, you can copy files to the leftover space on your drive and use as if your Ubuntu install wasn't there.
