When I download a distro of Ubuntu, it downloads as a .zip file. How can I convert this (these) file/files to .iso so I can install it?

Should download as a .iso file ...
http://www.ubuntu.com/desktop/get-ubuntu/download
Then use any CD burner and burn as an iso image.

Sounds like you are on a windows machine ...and Winzip will allow you to associate .iso with their program so that you can extract the files.
In this case ... ignore the icon / file association in Windows and just leave the file as an .iso file and burn it straight to a CD with a CD burner application.
