i have installed burg a little while ago and have a couple of questions

first i have uninstalled windows 7 and did some other stuff and i am trying to clean up the burg menu

sudo update-burg updates the boot list

To change the theme you need to press T when on the menu.

There are some other shortcuts here - http://www.omgubuntu.co.uk/2010/07/daily-5-5-keys-to-press-during-burg.html in fact there's a lot of BURG related stuff on that site, like extra themes and such.

The picture you linked that you want it to look like I think might just be a mockup though..

Yes - the 't' key (or F2), changes the theme when you are on the menu.

F1 will give you a menu of all the options available. For example: F3, then 'r' changes the resolution (finish by using the "Enter" key!).

I wish, though, that OMG - Ubuntu! would gather together all their blogs in one place. I keep finding links like the above by accident, rather than design...!
