The "Ubuntu" option or the "Ubuntu netbook". Ill wait for a few replies because people seems to have very different answers.

Ubuntu option is what you want.
If you wanted to download the netbook edition,..
http://www.ubuntu.com/netbook/get-ubuntu/download
then it would be the Ubuntu Netbook option.

The netbook edition has an interface specially designed desktop interface for the small screen that you normally find on a netbook, you'd most likely want the standard edition for a full laptop.

If it's a full sized laptop and you want Gnome go for Ubuntu, if it's an netbook...well Ubuntu netbook.
If you want a KDE desktop, Kubuntu. or if you want a lightweight desktop environment (XFCE) choose and Xubuntu.
I doubt you'll want to use a laptop as a Media server so Mythbuntu is out.

Ive got a 15inch screen with 2 or 3gb ram dual core processor, does that help at all?

The "Desktop" edition should work fine. I've been using it for a few years now on my laptop(s).
