Xubuntu is great don't get me wrong, but there's a few things I don't like about it. So my main question is, I've installed ubuntu-desktop package, how can I remove Xubuntu and just keep it as Ubuntu without having to reformat?

I'd even like to change the boot screen to show Ubuntu instead of Xubuntu.

Let me know.

OMG thank you thank you thank you.

It worked! PERFECT! I just had to reinstall a couple of apps that it removed that I wanted like my ATI Drivers, Pidgin and Thunderbird, but other than that it worked perfectly. Why isn't this a sticky?

the psychocats site is very useful. i'd suggest bookmarking it but (depending on the topic) if you spend a little time on google it'll come up.
