Thunderbird instead of Evolution

I just removed Evolution and installed Thunderbird. But in the upper right side of the screen, there is a picture of an envelope which used to open evolution for composing mails or checking mail accounts, but now, it doesn't do anything. I want it to open Thunderbird instead.
Similarly, there is a chat option that used to open Empathy, but I replaced it with pidgin, and now it doesn't do anything again. What can I do to change the functionality?
