I currently have a very dark theme and it has made everything in eclipse hard to read. Is there anyway to change the colors of Eclipse back to the defaults without changing my theme?

Have you tried Customize button -> Colors -> Text color in the Appearances Prefs?

Yes, however I would like to reset everything back to default without going through and changing the color of every separate thing.

No the correct solution but solves the problem I had
http://tipstank.com/2010/05/23/solve-eclipse-black-pop-up-code-assist-box-in-ubuntu-10-4-lucid/

as I understand it Eclipse is trying to use the colours from your theme, I suspect it's doing it badly** (listening to the background colour but then setting it's own foreground colour).

So you either need to fix eclipse (the correct solution) or modify your theme (what I've done having followed the suggestion in the link).
