You could install a Virtual Box and run Windows inside Ubuntu. When you want to use iTunes just open Virtual Box and run Windows to access iTunes.

Just wondering, what do you need iTunes for?

First off, what are your computer specs?

To install virtual box go to Applications>Ubuntu Software Center and search for VirtualBox OSE. Then install that.

From the specs of your computer I don't know if it will run VirtualBox well.

Have you tried Rhythmbox to sync your iPod touch?
