I have used a freeware app called nlite to create a slimmed down boot of Windows 7 onto a USB thumb drive. Is it possible to configure the USB thumb drive to create a dual boot of Win 7 and Ubuntu using the grub boot loader? If so, how would I go about tackling such a project?

I don't know about having Windows/ Win7, but a good resource is Hak5 episode 524 >http://www.hak5.org/episodes/episode-524 . It talks all about USB multi-boot.

Some more resources. I have not seen any place where windows worked. I did use panticz.de to install several ISOs to one USB.
