Depends on which computer. I generally use the Minimal CD, but sometimes I have to debootstrap or use PXE if the machine doesn't have a CD drive. Either way, always a minimal install.

For Ubuntu, always minimal with unetbootin. Even if the computer has a cd drive.

I always go with the desktop install, live-cd.
I actually go into the live-cd's ubuntu. That way I can browse the web and do other things while ubuntu installs.

There's Desktop CD ISO and DVD ISO but no Desktop DVD ISO, so Other since it's a combination of both.

For Ubuntu 6.10 / 7.04 / 7.10 / Ubuntu 8.04 - Desktop ISO
For Ubuntu 8.10 / Ubuntu 9.10 - USB Flash drive (Unetbootin)
And unrelated:
Arch - USB Flash drive (.img file)
As everyone can see I ran out of cds about half way into my Linux experience.

My CD burner has gone flaky and since it's a PowerBook G4, replacements are hard to come by. But I have learned a technique to download the ISO to a USB drive and boot from there. Recently I have loaded Xubuntu 9.10 Desktop.

I've actually done installs from the desktop, server and netbook CDs. All my computers are now running ubuntu! :D

I drop the installer kernel and initrd on my hard disk, modify the bootloader configuration of my existing OS, and reboot.

I use the desktop cd but I usually end up installing via a usb stick anyway. It saves cds and is easier in this day and age.

most recently (today) i used rootstock to build an arm ubuntu image for a beaglebaord.
