Is there a tool or app for the gnome desktop or nautilus that will pop up a preview of the file (spreadsheet, WP document, etc) when the mouse hovers of the file?

no, there's nothing that would preview a file simply by hovering mouse over it (apart from the audio files that already have such preview by default). but Gloobus does previevs many kind of files when you select them and press space (exactly like QuickLook on OSX).

I tried Gloobus, but it won't run properly on Lucid, which I'm using. It installs OK, but the Nautilus update won't install, it tells me a newer version is already installed so I can't capture the 'space'.
