I'm trying to replace Ubuntu 9.04 with Server edition 9.10 and my ISO's not booting on startup. Thoughts?

I assume you mean your CD failed to boot. Double-check the boot device priority settings in the BIOS (make sure the CD drive has priority over the HD, etc.) and also consult this manual:
