Poached... or scrambled with cream cheese...

I answered "scrambled/omlet," but some clarification is in order: Scrambled, with a bit of cream, lots of shredded cheese (a mix of chedder and aged Gouda works very well) and some chives. Should be cooked only long enough so the eggs are just >< past the runny stage. That and some well-buttered toast made from good bread... Mmmm... :)

I usually prefer scrambled with onion powder, garlic powder, salt, pepper, and milk added before they're to be scrambled. But sometimes I like to mix it up and have them over easy so I can dip my toast in the yolk.

I eat "other" - Eggs-Florentine

http://ubuntuforums.org/attachment.php?attachmentid=147065&d=1266183990

here is a recipe for Eggs Florentine, I prefer fresh spinach to frozen. I love spinach so I try to fit it in to any meal.

EGGS FLORENTINE
1 (10 oz.) pkg. frozen leaf spinach
6 tomato slices
3 whole wheat English muffins, split and toasted
6 poached eggs
Tarragon sauce
Paprika
Cook spinach according to package directions, omitting salt; drain well. Place a tomato slice on each muffin half. Spoon an equal amount of spinach over each slice; top with a poached egg. Spoon 2 tablespoons Tarragon Sauce over each egg; sprinkle with paprika. Yield: 6 servings (about 222 calories per serving).
TARRAGON SAUCE:
1/2 c. reduced-calorie mayonnaise
3 tbsp. water
2 to 3 tsp. lemon juice
1 tsp. prepared mustard
1/4 tsp. dried whole tarragon
1/8 tsp. white pepper
Combine all ingredients in a saucepan; stir until smooth. Cook over low heat, stirring constantly, 3 to 4 minutes until thoroughly heated. Yield: 3/4 cup.http://www.cooks.com/rec/view/0,1916,158178-253192,00.html

Not much people has eggs for breakfast outside of the anglo-saxon world.

I either have:

Mate tea (more a passion than a drink) with anything baked (cookies, cakes or even just a piece of bread)

Fruits and cereal flakes (oat, corn, muesli, whatever)

The Italian diet is the one that apparently will let you live the longest. For Italian dietologists more than 2-3 eggs a week is harmful for your health

I never liked the idea of sunny side up eggs. The yolk doesn't get warm enough if it's not flipped over.

I don't think most Americans eat eggs for breakfast on a regular basis either. For most people it's something they might have on the weekends as a treat. Unless they go through a McDonalds drive through for breakfast on a regular basis.

Isn't that something that scientists have been hotly debating for decades with evidence both for and against though?

Yes, and people from Italy (and japan, but I don't know about japanese eggs) are the ones with the longest average life span.

This is more than enough evidence to me.

I love eggs just about any way. But, over-easy/sunny side up is my favorite...especially with toast or tortillas to scoop up that wonderful yolk!!

“I’ll have the lot.”
“...A wise choice, monsieur! And now, ’ow would you like it served? All, uh, mixed up togezher in a bucket?”
“Yeah... with the eggs on top.”

Uh, sorry!
I realized how easy French toast is to do, so that's my current favourite :)
(An egg, a dab of milk and a dab of orange juice. Dip some bread in it, then fry it. Yum!)

Eggs Florentine looks awesome, 今幸福. Thanks! I'm absolutely going to try that...

I like mine over medium. But I also like omelets with ham and cheese a lot. Plain scrambled cooked in bacon grease with plenty of salt and pepper are good, too.

Ham in a pan with a bit of butter melted in it. Let it fry just a bit. Something like Parma or Tirolean or Black Forest ham is best, but boiled ham works too.
Break an egg over it and break the yolk.
As soon as it is hard enough, turn it over.
Cheese on top. Gouda is good, as is Edam, Cheddar or pretty much anything in that direction. Parmesan or Blue Vein not recommended.;)
As soon as the cheese is melted, it's ready.
Best between two slices of toasted bread. Some days I prefer German bread, some days white toast.

Scrambled all the way. Saute some chopped scallions, cilantro, chopped green olives, and a chopped chipotle adobado, then add two eggs beaten with milk and about two teaspoons of cotija granulado and finish it.

I'm not a huge egg fan, but I can eat them pretty much any way, provided the white is set. I'm not attracted to runny egg whites. That said, I eat them anyway, because my wife has never learned to cook eggs properly, even after 35 years of marriage, and insists on cooking them on high heat, then turning them only half way, resulting in burned exterior and raw interior. Taking a minute more would give much more palatable eggs, but she doesn't have the patience. I've decided that it's just not worth the angst to complain about it, there are more important things to worry about.

I had a soft boiled duck egg as a child that put me off them forever. I stick to chicken eggs. I have had a hard boiled quails egg a couple of times, but it didn't strike me as being something I really need.
