Minimal Install How-to

Can anyone guide me to a How-To on a minimal install and then adding Xorg
then only the packages I require . I don't want lots of stuff that comes with the default install like games, ekiga, pidgin, epiphany. I know I can always remove them from the default install but that leaves behind config files etc.
