I'm from Virginia. I eat Smithfield Pigs and therefore, Smithfield Bacon. Really soft.

Bacon is a cut of meat taken from the sides, belly, or back of a pig, and then cured, smoked, or both.

So you could attach some beef to say the side of a pig, cut it off, and technically it would be bacon!

unlike cheese that is strongly regulated and the use of the word is legally protected, thus some products can not use the word cheese but can only be called cheese-like food. The swine industry did not lobby for such protection of the word bacon, thus bacon can be made of beef, turkey, soy, even tofu and the manufactures have free reign to use the word bacon to describe and call their product bacon as they choose fit.

Thus beef bacon is a type of bacon that exist even if the wikipedia article on bacon fails to mention it. :p
