While I think it is a general improvement to add/remove programs for newcomers to linux, wouldn't it be great if programs could be listed based on popularity as well as tags that are managed by the community?

No offense, but not all programs in the repositories are gems. If a newcomer to linux installs a few bad/outdated programs in a row, it could lead to a poor impression. I think it would be neat if when you clicked on "Games" for instance is listed the most popular games first, so that they're likely to have a better first impression.

Just an idea.

I think there's a column with the number of stars. Can't check right now, but I think there was. Or maybe that was just in the old Add/Remove.

The software center doesn't have columns. Add/Remove does have this. Software Center doesn't. A loss, in my opinion.

The Software Center is by no means finished yet, it is a work in progress, it won't be finished until April 2011. For more info, have a look here (https://wiki.ubuntu.com/SoftwareCenter).
