I have just done a clean install of 9.10 and when visiting YouTube and trying to view a video in Firefox I get this message:

"You either have JavaScript turned off or an old version of Adobe's Flash Player."

Does this mean I need both JavaScript and the flash player?

What is the best way to install these and is there something else I might need/want to install in the future?

Javascript is read by the browser. You can't install it.
You just need to download and install flash. It's in the repos as "flashplugin-nonfree" so run
sudo apt-get install flashplugin-nonfree
