Should I wait until they make add ons such as cairo dock for 9.10 64 bit or download the 9.04 one? My first priority with this new install of 9.10 is stability

I would wait. Unless you need it like mad it would probably best to wait. I'm surprised that they haven't updated it already.

The Jaunty one may be OK on Karmic but after hearing that they changed a lot of the low code, I'm not sure.

If you use the official Cairo-Dock's repository, there is a 64bits package for Karmic.

Been using Cairo since the Alpha 3 release of Karmic with no problems. Included a brief stint on 64 bit and I ALWAYS download from their repos.
