My favourite Firefox extensions are

Adblock Plus (block ads)

Flashblock (blocks Flash)

Video DownloadHelper (Helps to download videos from Youtube and other online video websites)

Firebug (Web development tool)

In no particular order:
NoScript (Disable JavaScript)

Adllock Plus (Yeah.)

TimeTracker (Tracks time browsing in Firefox)

DownThemAll! (Nice download manager)

QuakeLive.com (Quake Live Game Launcher)

and ChatZilla (Though I rarely go on IRC and when I do I prefer to use Konversation)

AdBlock Plus.

Vimperator. (Adds Vim like keybindings to Firefox so you can do everything in firefox from the keyboard. I don't even touch my mouse when I use firefox anymore. Also, it makes browsing about 100 times faster. :P)

I don't use adblock + since being able to run Privoxy on IPCop/Copfilter firewall/router.

FirefoxNotify - Dbus notifications on Firefox events

SmoothWheel - a good implementation of smooth scrolling
Context Search - a context menu to search for highlighted text on installed search engines
Xmarks - store and sync bookmarks in the cloud
Save File To - save files straight from context menu, skip the file dialogue
Tab Preview - preview tab contents on mouseover

BugMeNot - Useful when I don't want to bother registering my own account on a web site, i.e. if I'm only going to use the site once.
CustomizeGoogle - Does what its name says :)
Greasemonkey & Greasefire - Greasefire finds Greasemonkey scripts for whatever site you're currently on
No Tooltip Timeout - Does what the name says. Useful on the Ubuntu Forums.
Weave - stores and syncs bookmarks and history in the cloud
FEBE - Backs up your Firefox extensions and preferences; can optionally back up your entire profile

* Puts emphasis on the domain to reduce spoofing risk
* Linkifies URL segments (press Ctrl, Meta, Shift or Alt)
* More URL formatting options configurable
