As a Mac User, one of my favorite features is the ability to have programs open in a specific desktop. For instance, I have my music player always open in Desktop 4, Miro in Desktop 3, Web browser in Desktop 2 and use Desktop 1 as my general workspace. Is there a program or a way to do this in Ubuntu (specifically 9.10)?

What you want is called window matching. If you are using compiz (desktop effects), you should be able to change the window matching rules.
If you are using metacity (no desktop effects), look at devilspie, which gives window matching abilities to metacity
EDIT: Hmm... can't seem to find this option myself in the Compiz settings
