- Using the Jaunty Live CD I am able to select 1440x900 with this onboard video and widescreen monitor.
- Using the INSTALLED version of the OS the screen res maxed out at:
1028x768 via Preferences > Display
How can I get back to 1440x900?

Have you tried the following command
sudo dpkg-reconfigure -phigh xserver-xorg
its should reset your video

Haven't tried that, but I'm going to need do so from the LiveCD and need directions for doing so

No - you don't do it from the liveCD you need to do it from your desktop. If you cannot get a terminal in your desktop use <Alt><F2> to get a command line and put it in there.
The other option is to boot into recovery mode and use the menu item to recover your video driver.

That machine currently boots into a BLANK screen

Do you know how to get to the recovery menu (type escape at the grub prompt)?
