The computer is having issues with the CD rom so i'm trying to install 8.10 server edition by the usb stick.
I followed this tutorial:
https://help.ubuntu.com/community/Installation/FromUSBStick
using UNetbootin to create the stick. All goes well until the installer attempts to load files from the CD. I get an error that says "Failed to copy files from CD ROM"

Can anyone shed some light on this or point me somewhere useful? I have tried everything I could possibly think of.

Have a look at this post (http://ubuntuforums.org/showthread.php?t=1223483&highlight=install+server+edition+usb) and see if it helps. Here is (http://ubuntuforums.org/showthread.php?t=999022) another possible workaround.
Launchpad has a confirmed bug (https://bugs.launchpad.net/ubuntu/+source/cdrom-detect/+bug/104113) that seems to match your symptoms.
