Panel Foreground Colour

I'm customising a panel using a dark background but I cannot see a way of making the foreground lighter so that I can see the text of the items on the panel.

Is there a way to achieve this?

Panel colour is GTK-theme-dependent.

The easiest way is probably to install and use gnome-color-chooser.
