The only great thing in vista ultimate was Ultimate extras (Interesting stuff via windows update) Now this has been removed in Windows 7, so no dreamscene, extra games...
Why did Ms take such a decision?

I am sure it was an economic decision. They were faced with slumping Vista sales and had to undergo lay offs for the first time in the history of the company. I am sure if sales of Windows 7 do not pick up compared to Vista, more jobs will have to be cut.

Are you using the RC or the RTM? I'm waiting until I get the RTM comes out today to find out what exactly the differences are.
I'm glad to see some updates to some of the older programs like paint.exe and like what they've done with the panel but that will probably be the same across the board in all the versions.

If you can still use xhtml/html as backgrounds you can use XPscene to convert the .wma files into xhtml/html which has a built in player for it. Works for XP at least. (Requires you to have .Net Framwork 2.0 or greater, which I would think isn't a problem at all.)
