Is there any good way to do this? I wanna huge icon for a poor vision user to change to an accessibility theme without have to use any menus.

I don't know of a way to do it in one click. What you can do is go to System > Preferences > Appearance

And instead of left clicking on the Appearance entry, right click it and select "Add this Launcher to Desktop"

This will put the launcher on the desktop as an icon.

Now, right click the icon and select "stretch icon"

This will let you grab one corner of it and make it as large as you want.

The resulting icon can be huge, but it will just run the Appearances program like before. Fortunately, the First tab displayed is the Themes tab and it should not be too hard if you don't have a lot of themes installed for the person to select one of the high contrast themes that are provide by default.
