Can I do this? I want basically to know what video capture card(s) I ought to get for compatibility. Where should I look for how to build a system that captures and stores video streams from multiple cameras and can be controlled remotely and securely? Any suggestions? Thanks in advance.

i have a 4way capture card (BT878) which ubuntu sees no problem, there is a program called DVR in synaptic which i couldnt get to work, also there is a program here www.zoneminder.com which looks interesting but as i'm a novice i couldn't install it, even after hours of reading guides and threads! post back if you find anything or get it working...

If a webcam is enough for you: http://aelf.co.uk/archives/2005/12/adding-home-security-features-to-my-ubuntu-machine/

I really want an open-source setup. A webcam is not enough. I want 16 webcams, in 640x480 and with sound recording too on one or two of the cams. And I want to be able to log in remotely and control/download/view streams.
I'm finding commercial apps . . .

hi, a shop near me has asked me to help setup the exact same thing, even down to 16 cameras  you're not them are you? i suppose not because when i mentioned open source there were some blank faces. i've only spent about 10 minutes looking things up, all i've found is this:

Someone suggested http://www.zoneminder.com/
I forgot the other one, but it really had a commercial-type web site and I was turned off. I'll consider paying for the software if there isn't any other choice.
I haven't tried any. I'm still examining options. I haven't bought any hardware yet. (I'm still golden, but I need to decide what to get.)

incidently, CCTV (and security) is my line of business. the company ( www.renard-systems.co.uk ) i work for obviously only installs high-end equipment. There are lots to choose from in this day and age, but here are a few recomendations for serious standalone systems.
