Are there any ways to remove a few "default" apps from installation disk ?

I want to remove some of default installation apps - for example, pidgin, ekiga, etc.
I will never use them and it would definitely be easier if I knew that they are not on my system by default.

How to customize, which applications installer should install and which shouldn't ?
