So Swiftfox is fast. Lightning fast. Frankly the difference was vastly more than I expected it to be. But what does that say about Firefox and the way it's released? And should Ubuntu include SwiftFox by default?

I don't see how it could hurt to include either Swiftfox or Swiftweasel. I'd quite like to see them both in there.
