Ok, so as the title says, I want to know your recipe for the best egg sandwich. Here is mine

Egg mayonnaise

Smother 4 pieces of bread with butter
Boil the kettle
Pour the boiling water over 2 eggs in a suacepan
Leave to boil for 5 minutes
Drain, peal eggs
Place both eggs in a bowl
Add a generous amount of pepper
A pinch of salt
A fork full of mayonnaise
Mix
Add to bread
Slice in half


Also you may enjoy adding some home grown cress to the mix.

OK, this is inspired from a Red Dwarf episode:

Triple Fried Egg Butty, with Chilli Sauce and Chutney

1. Add a generous lug of olive oil to a COLD frying pan
2. Gently crack 3 eggs in, making sure they all get some of the oil
3. THEN turn the hob on medium, the eggs will cook slowly and won't get the crispy bit around the edge (if you put them in hot oil the edges burn).
4. Break 2 of the yolks (otherwise the sandwich is just too messy!)
5. Once done, turn off the hob and leave the eggs in the pan (they will stay warm)
6. Butter 2 slices of the thickest sliced white bread you can find
7. Spread sweet chilli sauce on one (or Tabasco if you really want hot)
8. Spread mango chutney on the other
9. Put each egg on a piece of kitchen towel (to soak the fat) before turning onto the mango covered bread (this stops the egg being slippy, and the mango chutney holds the bottom egg in place), put the egg without the broken yolk on the top
9. Close the sandwich with the other slice.

Seriously, it's lovely and the ultimate hangover cure... if you can stomach it. ;)

My fave is as follows:

Fry up some bacon so theirs a load of bacon fat in the pan. (put bacon to the side forthe moment)
Get a thick slice, or 2, of bread and fry the bread in the bacon fat for a min each side.
Take out of the pan and cut a hole in the center with a cookie cutter.
Place back in the hot pan and break an egg in to each hole.
Keep on the heat till the egg is cooked
Then add the Bacon to the top of the bread covering the egg yokes and flip over. (this can be a bit messy and take a bit of practice not to break the yoke.)
Reheat the bacon for a min or 2 and add in the 2 cut out bits of fried bread to the now exposed underside of the egg.

Serve with Brown sauce

With 2 aspirins and either Coffee or Irn-Bru lol!!
Great hangover cure!!

Fry egg.

Eat.Almost perfect:

1. Take fried egg (yolk must still be slightly runny).
2. Insert into home-made hamburger*.
3. Eat.


*structure of burger, top-to-bottom:
bread; coleslaw dressing (think mayo but creamier, sweeter and probably more fattening); iceberg lettuce; shaved carrot; dill pickles; olives; beetroot; cucumber; bread; jarlsberg cheese; fried egg; beef patty; roma tomatoes; tomato paste w/ herb and garlic; bread.

Dijon mustard, fried pineapple and bacon are all optional.


And that's how you make the best egg ...sand ...hamburger.

Best fried egg sandwich to me is my own version of an egg McMuffin.

1 egg, cracked into hot stainless steel pan with Pam cooking spray. It's important to keep the egg moving by shifting the pan before the first flip. Try to flip egg for the first time without utensils so the yolk does not break. The egg should move freely because you were shifting it around. When the egg white has more than 1/2 whitened, its ready to flip. Little salt, little pepper to taste. on second flip, throw in a slice of canadian bacon to the pan (not the egg) and let brown, flip the canadian bacon once before removing egg and it. Flip the egg one more time and add one slice of Tilamook medium or sharp cheddar cheese. Let melt. add all items to toasted Thompson english muffin.

P.S. If you like it spicy, you can add a few dashes of tobasco, or if you are like me and think tobasco is nasty in everything but N.E. Clam Chowder, you can use Sriracha.

Boil an egg, slice two generous doorsteps of some nice wholegrain bread, spread liberally with butter.
Once the egg has boiled, throw it in the bin and look in the fridge for something nicer to use instead, smoked salmon and cream cheese for example.

Chives
Curry
Relish
Mayonnaise
Salt
Pepper

Use the Curry instead of mustard, this is the greatest Egg Salad Sandwich. A friend of mine made this for me last week end while I setup a new computer, and it's how I will make them from now on.

Fried Egg Sandwiches are mighty fine too; Fried Egg, Mayo, Salt, Pepper, on Toast, nom, nom.

1) Mix white and yolk.
2) Fry egg in olive oil.
3) Leave egg in oil to remain warm.

2) The Tomato
1) Add passata, mixed herbs, crushed chillies, and tomato puree to a pan.
2) Optionally add vindaloo curry paste.
3) Stir well and cook for several minutes.

3) The Potato
1) Peel potato.
2) Cut into slices.
3) Fry in oil until crispy.

4) The Sandwich
1) Toast and butter two slices of white bread.
2) Put tomato on lower slice.
3) Add half of the egg.
4) Add some more tomato.
5) Add the potato.
6) Add some more tomato.
7) Add the rest of the egg.
8) Add some more tomato.
9) Add the top slice of bread.
10) Add the rest of the tomato.
11) Eat the best egg sandwich ever (knife and fork is advised).
