So I know I can change my sources list to grab the new version of Ubuntu, does this mean I can also do it to revert to an older version? And what would happen if I were to mix sources from say hardy and intrepid and jaunty?

Hi, you cannot downgrade to a earlier release by changing your sources.list this will cause breakages. Mixing different repos for different releases of Ubuntu can also lead to breakages.
