I don't know if you can call them podcasts, but I'm a pretty big fan of Revision 3, especially Systm, Tekzilla and Hak5.

A few of these have been mentioned I think but here is my list (all links are to the rss feed):

Are We Alone? Science Radio for Thinking Species (http://podcast.seti.org/index.xml)
Astronomy Cast (http://www.astronomycast.com/podcast.xml)
The Crypto-Gram Security Podcast (http://crypto-gram.libsyn.com/rss)
Dogma Free America (http://www.dogmafreeamerica.com/rss)
Godless Comedy with Pat Condell (http://patcondell.libsyn.com/rss)
Skeptoid: Critical Analysis of Pop Phenomena (http://skeptoid.com/podcast.xml)
The Amazing Show starring James Randi (http://feeds.feedburner.com/JamesRandi)
The Infidelguy Show (http://infidelguy.libsyn.com/rss)
Non-Prophets Radio (http://www.nonprophetsradio.com/nonprophets.xml)
The Skeptics Guide 5x5 (http://theskepticsguide.org/feed/rss.aspx?feed=5x5)
The Skeptics Guide to the Universe (http://theskepticsguide.org/feed/rss.aspx?feed=SGU)

Not a whole lot of technology podcasts, I always find that the signal to noise ratio is unbarely high. The hosts are uninformed talking windbags who read and "debate" this weeks news without understanding it. Often they get facts completely wrong to the point of making me want to scream. On occasion there are good interview episodes which I will download as singles and add to my library.

Higher degree of being informed can be found in such outlets as Pauldotcom Security Weekly and Herding Code. Most Linux podcasts though.. frightfully horrid fanboy efforts without honesty or research applied. I am hoping to see a Linux podcast of the quality and honesty seen in the SGU podcast, where they are willing to go back, ask the people who can give answers and evidence then apologize for being wrong as well as making well reasoned arguments.
