how to download debian? on the official website there are many dvds and I didn't understand nothing.

For Gnome, just download CD 1 or the netinst CD. CD 1 will have everything you need, the netinst will download everything from the servers. I recommend using BT or Jigdo.
If you want KDE, XFCE, or LXDE download the appropriate CDs. Installation should be easy.

are you sure the closest server is spanish? or maybe server speed does not depend on distance.

DVD1 will have more packages on it then CD1 will have that is the only difference.

Sometimes it does, rather not on distance, but a geolocation. You'd probably get slower speeds from an American server.
