Hi everyone,

Is there way to install Ubuntu without any Desktop Environment? and select packages before they are installed?
Or shall I install everything and delete then manually?

You can install ubuntu server. That has no GUI

You can do a minimal install - https://help.ubuntu.com/community/Installation/MinimalCD

IIRC, you are given the option not to install some stuff. Also, if you do a server installation as suggested above, you can install the gnome-core metapackage instead of the ubuntu-desktop one. That will only install the stuff needed for Gnome and not all the extra stuff that typically comes in a fresh installation.

Here is a minimal installation tutorial that might help. It uses the Minimal CD.

The general idea is to install a command-line system and build up from there. ;)
