I was wondering, if it would be worth, backing up everything I need then FULLY wiping EVERYTHING on the computer, Both Ubuntu and WINDOWS, so then I can start again with several Linux OS's instead of WINDOWS.

Few questions.
Once I delete both OS's then re-install Ubuntu, will the install work without Windows being there?
Will it matter how much I partition for the first Linux OS?
What is a really good Linux Distro?

1. no os depends on the other to function, so without windows the install would still work. or if you meant the 'installer', it would work too.

2. the size of the partition should be enough to install the os, other than that it doesn't matter.

3. really good linux distros: ubuntu, opensuse, linux mint, debian, fedora, arch, etc.

A really good place for Linux distros is distrowatch. Debian is in the list in the lower-right.
