I have an external hard drive, it is where I store all of my pictures, videos, music, documents, etc. Is there a way I can have those options in my places tabs point to my external hard drive rather than the Home Folder folder?

Could I use that to get rid of the Documents, Music, etc. (Home folder) shortcuts?

Yes. Just open the file manager, then select Bookmarks/Manage Bookmarks from the menu. You can remove and arrange you Nautilus bookmarks there. (Nautilus bookmarks are what you'll see in the file manager's side panel and in the Places-menu.

To add your own bookmarks just browse to that directory and select Bookmarks/Add Bookmark.
