Just installed 8.1 on a powerbook g4. How do you add applets to the panel with no right click button?

if you look around in package manager, there should be an on-screen keyboard. I believe there's one called with Orca with the accessability options. Anyways, look and I think that there is a button for right-click with the on-screen keyboard.

Does F12 work as the right click on your box; perhaps fn+F12 as an alternative?

haha, i just tried that for fun and my computer went to the screensaver and fell asleep

Interesting. On my G4 Cubes, F12 is the default right-click.
