recent documents behavior

I have searched the built-in help and the Ubuntu forums and have not found any help about how to change the behavior of "Recent Documents" (other than how to turn it off).

Is there a way to pin any docs to the recent docs?
Is there a way to change the number of docs it remembers?
Is there a way to change how it sorts the docs in the list?

Also, how does it determine which docs to keep and which to throw away? I swear it has kept older docs in favor of docs I just was using.
