Hi,

I have tried the method described in "HOWTO: Change Font Color in Gnome Panels" but this only changes context menu and active window menu text to white.

Is there another way? Does it matter that I have my Gnome menu set to transparent?

To edit various fonts and colours, download "gnome-color-chooser"
sudo apt-get install gnome-color-chooserIt ends up in System -> Preferences -> GNOME Color Chooser. Click the panel tab and there you can set the font and colour for your panel and panel text. There are also a lot of other options for changing the font/colour of other parts of the DE.
