i have searched high and low to find how to change my computer's name in terminal, i have uninstalled the network manager and configured my network manually, this has left me with out a gui to change my computers name.

In the terminal, type:

sudo gedit /etc/hostname
and replace whatever is written there with your new name. Then, change the name (but not the IP address) in /etc/hosts as well.

sudo gedit /etc/hosts
Reboot and you're set.
