I have looked and can't find how to use single clicks to select desktop shortcuts. (In XUBUNTU)

Can anybody suggest another fast desktop manager where it can? I've tried GNOME, Linspire, and KDE 3.5

Correct, it cannot be currently done. You can always replace Xfwm with Fluxbox/Openbox.
