I am used to using servers w/o a gui, but setting up virtual box w/o one is a pain in the ***. Are there any WM/DE that dont use many resources, but can be ported over ssh for me to set up vbox? (its a headless server)

Any of the lightweight ones should be good. XFCE, LXDE, e17, Openbox, Fluxbox.

ok, perfect, but how many of those have a way to connect to encrypted wireless?

The Network Manager package would do that

I set it up in Gnome, but in XFCE my Network Manager settings work. It connects automatically to my encrypted wireless. But like JT9161 says, that's Network Manager. I'd suggest something that is super lightweight, like e17, or one of the boxes, if only for speed.
