I have Ubuntu at home
I have Windows at work

On my Ubuntu machine, I have enabled remote desktop via preferences-> remote desktop.

A little message appeared saying users can access your remote desktop using this command: vinager mycomputershostname:0

I have my LAN IP
I have my WAN IP

Now what do I do at work on my Windows XP machine to access my home machine?

I haven't tried it, but I found this (http://www.ubuntugeek.com/share-your-ubuntu-desktop-using-remote-desktop.html) How-To with a Windows-access section. Hope it helps.

you would also need to open port 5900 on your router.... do you get a dynamic or static wan ip??

then you might want to setup no ip or dyndns to get a free domain name which is easier to remember than a dynamic ip.. this should help setup no ip in linux http://www.prash-babu.com/2008/12/how-to-setup-no-ip-client-in-linux.html
