I am actually embarrassed to ask this question because its so stupid, but I just can't seem to figure it out. I have used GTK-recordmydesktop to record my desktop, but don't know how to make it stop recording and save the video. Can anyone help me?

I've never used this application, so this is just completely baseless, but have you tried hitting Ctrl + D? A lot of Linux/Unix stuff will close up shop when you hit Ctrl + D.

Nope, ctrl + D doesn't work. Not being able to do this makes me feel so stupid! Anyone else got any ideas?

When it's recording in the notification area with the sound icon and others, there should be a red circle. Click on the circle and it will stop recording and save the video.
EDIT: I mean something that looks like a white square. When you click it it turns into a red circle.

Ah! Thank you! I had got rid of my notification area because the pop-ups there were annoying me. All working now, thanks.

Actually before you start recording, its a red circle, but while recording, its a white square. Clicking on it stops the recording. :)
