Every time Ubuntu updates it adds another line in my boot menu. What for? Why would I want to boot older versions of the kernel?

Apparently because it updated your kernel. You only HAVE to have one, but it is recommended that you keep at least one of the older ones around for a fall-back in case the most recent goes south for some reason.
